Irrespective of the volume of sales, a Terminal Server will support about 40 to 50 users at most. It is infinitely expandable by using a Terminal Server Farm (multiple servers) and setup load sharing.
A cheaper option is to get 1-2 heavy weight servers and run a
Virtual Terminal Services Farm using multiple Virtual servers. You will need VMWare for this. Also a good SAN and File server to store your data.
At my place of work we have a farm of 5 servers servicing 300 or so users at one time. Users connect in using cheap XP computers or thin clients. We also have a complete environment supporting 35 users on a Virtual TS Farm. Works very well and is ideal for your situ.
Servers with that much power and memory do not come cheap but we use IBM Blade servers and an IBM SAN. Connections are by fibre optic cable so access is extremely fast.About $25 to $30 a pop.
