If you are only changing the server and not the workstations, then you don't need to change the VFP software. As Simon said, install Samba on the linux server and put your data there.

In case you are using a different backend for you data, it will depend on the backend. If it is SQL server, you cannot move to a linux server. Keeping a Windows 2008 virtual server on top of a linux server is not going to decrease your costs. Almost all other databases are also available on linux so you won't have any problem there.
