You are mixing up two things here. The use of a menu and your desire to show the screen in a maximized way.
let me give you an example.

in the config.fpw you first add the line
SCREEN=OFF

During the setup of your application you open the database, do the menu.mpr and all those kind of preparations you need to run the app.
Mind you, the screen is still invisible.
Then, when all is set into place you do
_screen.visible = .T. and (rolling drums, blazing trumpets) voila, there's your app... (tada tada tada tada)

One of the things to have another background then the standard white one is described in my article, control the background color of the _screen.
Also you can add a picture to the screen (_screen.picture) make that big enough to cover the whole _screen area and you are set.
