Now-a-days most savvy CIO's use VMware or software like it for their Servers. Cheaper than buying the hardware.
Last job I worked on was win2008 server on a VMWare virtual machine. At that level you can assign any number of processors and memory and users.

And VFP will run on them, even vfp 6.
